Generally food is defined as the substances taken in by mouth which maintain life and growth that is supply energy and build tissue.
Food Engineering
It is the study of processes which transform raw materials into finished product.
Food Science & Technology
It is the application of basic science to the management of food from the time of production until their use by the consumer.
Functions of food:

♦ It repairs damaged and wound tissue
♦ It makes reproduction possible
♦ The consumption of food provides a unique physiological and aesthetic effect
Composition of food:
I. Major components
It includes: Moisture, Carbohydrate, Protein, Lipids/Fats, Mineral.
II. Minor components
It includes: Vitamins, Enzymes, Pigments, Flavor, Toxic components etc.
Sources of food:
I. Plant origin:
Cereals(rice wheat, corn/maize, barley, mullets etc), Pulses, fruits, Vegetables.
II. Animal Origin:
Fish, Meat, Poultry.
